Tomato chutney

Ingredients

 

Tomato:2

Big onion:1

Red chilli powder: 1tsp
Salt to taste
Mustard
oil
Curry Leave


Preparation

 

-Cut the tomato and onions in to small pieces.

-Pour oil in to a cooking pan.

-Add the onion and shallow fry it for few min.

-Put the tomato and fry well

-Add the red chilli powder and Salt.

-Grind it well.

-Pour some oil, season with mustard and curry leave.

-Pour the grinded paste in it and add some water if required.

-serve it with appam, dosa, upma…………





Potato Fry

Ingredients:
Potato- 3

Urad dhal-1 tsp
Mustard seeds- 1tsp
Turmeric powder-1/4 tsp
Red chilli powder- 1tsp
Salt -to taste
Oil

 

Preparation:
-Pour oil in a pan.

-Put urad dhal, mustard, turmeric powder and chilli powder.

-Add potato and mix it well.

- Stir gently and cook it until fried well.





Mango Chutney

Ingredients:

Raw mango-1
Coconut -1/2
Green small chilli (kanthari)-3
salt-to taste

 

Preparation:

-Wash, remove the skin of the mango and cut into small pieces.

-Grind coconut, mango, chilli and salt with little water.

-Have this mouth watering mango chutney with rice,  dosa………





Moru curry/ Kalan/ Pulissery/Kachi moru

Ingredients:

Curd or Yogurt-500ml

Small onion-5

Green chilli-3

Dry chilli-2

Ginger-1tsp

Garlic-1tsp

Geera(cumin)-2pinch

Menthi(uluva)-1/4tsp

Curry leaves-2flakes

Turmeric powder-1/4tsp

Oil

Salt to taste

Preparation:

-Beat the curd well.

-Cut the onions in to small pieces and greenchilli in to long slices.

-Grind geera ,menthi ,ginger and garlic.

-Heat oil in a pan, crackle mustard,add cut small onion,curry leaves,green chilli, dry chilli, ground mix and turmeric powder.

-Add beated yogurt in to this mix,keep the flame in sim,stir continuously for 1min and remove from the heat.





vazhakka(Plantain) thoran

Ingredients:

Vazhakka-1

Greenchilli-2

Dry chilli-2

Small onion-5

Turmeric power-1/2tsp

Coconut-1/2(grated)

Mustrad

Curry leaves

Salt

Preparation:

-Peel the vazhakka and cut in to small cubes.

-Wash it in water.

-Soak it  in mixed with salt and turmeric powder for 10min.

-Strain the water and cook vazhakka with a little salt  , tuemeric powder, cut greenchillies and water.

-Grind the coconut

-Heat oil in a pan ,crackle mustard ,add cut smallonions, curry leaves and red chillies

-Add ground coconut.

-Add the cooked vazhakka and mix well.





VAZHAKOOMBU /PLANTAIN FLOWER THORAN

Ingredients

1 Plantain Flower
1/2 tsp salt
1/2 tsp turmeric
1/2 tsp mustard
1Big onion

1/2 coconut grated
1 or 2 red chillies
1 tbsp oil
3 green chillies

1 clove garlic

preparation

Cut the flower as fine as possible.

Cook the flower with turmeric until it is tender .

Add the grated coconut,garlic & green chilly and mix well.

Now take the rest of the oil and season with mustard, red chillies and onion.

Once the onion is fried add the plantain flower mixture to this and cook for
3 minutes and remove from heat.
